I have a delicious, easy to make, summer cookie recipe to share with you today – super soft and chewy lemon cookies! OH YUM. 🙂
This recipe is based off of a lemon cookie recipe I found in Allrecipes Magazine, you can find the original recipe here. I made a couple of simple changes (but the original recipe is delicious too!) and the result is a crazy soft, light, and airy cookie with a subtle and sweet lemon flavor.
SOFT AND CHEWY LEMON COOKIES
1 box lemon cake mix
½ cup bread flour
1/3 cup vegetable oil
1 tablespoon fresh lemon juice
1/3 cup powdered sugar
In a large bowl or stand mixer, combine cake mix, bread flour, eggs, oil and lemon juice. Mix well. Drop batter by rounded tablespoons into a shallow bowl filled with powdered sugar. Roll batter in sugar and shape into balls. Place on ungreased baking sheet. Bake at 375 degrees for 8-9 minutes. Allow cookies to cool on cookie sheet about 2 minutes. Transfer cookies to rack to cool completely. Makes 2 -3 dozen, depending on the size of your cookies.
I found it’s best to double the recipe up if making these for a potluck or picnic – they have a tendency to vanish right before your eyes.
